The first time I experienced Tsiknopempti in Cyprus, I was completely unprepared. Walking through the streets, I noticed something strange—almost every shop, office, and home had a grill outside, sending plumes of fragrant smoke into the sky. The delicious scent of sizzling meat filled the air and before I could even process what was happening, a friendly papou (grandfather) offer me a souvlaki skewer and a shot of zivania.
“Ela! Eat! Today we forget everything—only meat and party!” he laughed.
Within minutes, I was caught up in the moment—eating freshly grilled souvla and watching locals burst into spontaneous dancing and singing.
Tsiknopempti, or Fat Thursday, is one of the most joyous and indulgent days in Cyprus, marking the official beginning of the Cyprus Carnival season. The name comes from two Greek words:
As Lent approaches, this day is the last major meat feast before fasting begins, giving everyone an excuse to grill, feast, and celebrate.
From early in the morning, every street, home, school, office, and even government building sets up a foukou (charcoal grill), and while it’s officially a working day, no one is really working. Instead, people gather to cook souvla (large skewered chunks of pork, lamb, or chicken), souvlaki, loukanika (sausages), and even halloumi cheese, sharing plates with friends, colleagues, and even complete strangers.
One of the most unique aspects of Tsiknopempti is its open-door policy—whether you know someone or not, if you pass by a barbecue, chances are you’ll be invited to eat. The entire island feels like one big family, united by the love of good food and great company
